No-Bake Chocolate Avocado Cake


This cake is divine, ridiculously easy to make, and it's much much healthier than a 'normal' cake! It has lovely textures with a crunchy nut/date base and a deliciously creamy chocolate mouse layer on top!
You probably think avocados in a cake sounds weird and trust me, I thought that too, but oh my god they make the cake so so creamy, smooth, and delicious! But please only use avocados that are ripe because if they're not ripe then your cake will just taste like guacamole with a hint of chocolate ahahaha!


You're going to need a food processor and ideally a springform tin for this recipe but if you only have a normal baking tin just use that, but you won't be able to take any nice pictures when you have the cake finished!
(A springform tin is a baking tin where the side can pull off/clip off from the bottom part of the tin btw)


Because this is a raw cake, not only is it amazingly easy to throw together, it also contains more nutrients because it isn't baked at a high temperature. This means that it's a healthier cake and it'll supply your body with some amazing nutrients and you won't even notice cuz it's so tasty!!!

Sorry for chatting so much, here's the recipe!...

No-Bake Chocolate Avocado Cake 

Ingredients:

Base:

  • 200g mixed nuts (e.g: 100g walnuts, 50g almonds, and 50g cashew nuts)
  • 100g dates
  • 30g coconut oil

Chocolate layer:

  • 4 ripe avocados
  • 100g cacao powder
  • 100g coconut oil
  • 2 teaspoons vanilla extract
  • A good glug of maple syrup (about 100ml-ish, add more if you want the cake to be sweeter)

Method:

  1. Blitz the ingredients for the base in a food processor until the mixture kind of resembles bread crumbs.
  2. Press this mixture into a lined baking tin, then put in the fridge and allow to chill. Use a baking tin where the side can come apart from the bottom (a springform tin) if you have one, then it'll be easier to get the cake out when it's finished! Also, use the back of a spoon to flatten the base mixture in the tin. This allows for a more even and regular base all around the cake.
  3. In the food processor add all the ingredients for the chocolate layer and blend until smooth. (There's no need to wash the food processor between making the base and the chocolate layer!) Make sure that the mixture is blended fully, the last thing you want is random chunks of avocado in your chocolate cake!
  4. Pour the chocolate layer on top of the base layer and spread it around evenly.
  5. Chill the cake in the fridge for at least 5 hours, ideally overnight.
  6. Decorate the cake with whatever you like, e.g fruit/coconut/dusting of cacao, etc!

Benefits of Ingredients Used:

  • Nuts - Protein, unsaturated fats, omega 3, fibre - Nuts are a brilliant source of plant-based protein, and by eating different types of nuts, you ensure that you're getting loads of protein and also all the essential amino acids that are needed in the body.
  • Avocados - Monounsaturated fat, iron, copper, folate, potassium, fibre - The monounsaturated fat found in avocados helps reduce your LDL cholesterol (bad cholesterol) levels and also helps with decreasing your risk of cardiovascular disease. Avocados are also a good source of vitamin E which is a strong antioxidant, it helps with hair growth, it improves the health of the eyes, and it also helps reduce the pain and duration of menstrual symptoms.

Don't worry, the food processor was turned off when I took this picture ahaha!!!






The springform tin that I have doesn't have a clip at the side, it's really old-fashioned, so I had to slide the cake out of the sides ahaha, scary stuff! If your tin is like mine, just get a mug, put it under the base of the tin, and push gently until the side comes away from the bottom of the tin and there ya have it!


I think this cake is perfect for summer, it's so easy to make and it's brilliant for a dinner party, a bbq, or a picnic!
